• 1 tbsp butter
• 1# parsnips, sliced thinly
• 1# apples, peeled, cored & sliced
• 1 med onion, chopped
• 2 tsp curry powder
• 1 tsp ground cumin
• 1 tsp ground coriander
• 1/2 tsp cardamom
• 1 clove garlic, crushed
• 1 quart stock (vegetable, chicken or beef)
• 1/2 cup cream
• Salt & Pepper to taste

Melt butter, add parsnips, apples & onions. Cook until soft. Add spices and garlic, cook for about 2 minutes stirring well. Slowly pour in stock. Cover and simmer for about 30 minutes, until parsnips are soft. Use a hand blender or food processor to puree slightly. Enjoy!
