Serves 4

Ingredients

• 1 tsp. olive oil or ghee (for those 100 mile diet people!) 2 medium leeks
• 4 cups broth
• 1 large potato, but into 1/2” dice
• 2 cups kale leaves
• 1/2 tsp. sea salt
• Freshly ground pepper to taste
• 2 tbsp. chopped parsley
• 1 tbsp. chopped chives

Directions

Place all ingredients except pepper , parsley, and
chives into a crock-pot and let simmer on low for six
hours.
Using a hand blender, puree the mixture until smooth.
Add pepper and reheat.
Serve with a sprinkling of chives and parsley
