Zucchini and Mushroom Quiche

Ingredients:
- 1 lb. zucchini, unpeeled and cut
- 1/2 lb. mushrooms, sliced
- 2 onions, chopped finely
- 2 garlic cloves, chopped finely
- 1/2 stick butter
- 4 eggs
- 1 1/2 c. half and half
- 1 c. grated Swiss cheese
- 1/2 c. Parmesan cheese
- Salt and pepper
Preparation
Bake 1 (9 inch) pie shell in 400 degree for about 10 minutes.
Reduce oven temperature to 350.
Sauté together first 5 ingredients until zucchini is tender and all of the liquid is evaporated. Place mixture into pie shell.
Beat together eggs, half and half, cheeses, and seasonings
until blended. Pour mixture into pie shell and distribute easily.
Bake in 350 degree oven for 45 minutes or until it is set and top is golden.
