Apple Salsa

3 apples, peeled, cored & chopped
1 medium sweet onion, diced
1/4 cup fresh cilantro, chopped
1 tablespoon fresh mint, chopped
2 teaspoons lemon or lime juice
1/4 cup flaxseed or olive oil
1 tablespoon maple syrup

Mix all the ingredients together and serve with your favorite chips, or on grilled veggies! If you like your salsa a bit smoother, place half of the mixture in a food processor or blender for a second or two and add back to mixture. From: Institute for Integrative Nutrition
